Marmite and cheese melts

Easily doubled for two, use a second slice each and grill in two batches if your grill pan is small.
Marmite is not for everyone, and this recipe is not trying to convert anyone who has already decided against it. For those who do want it, a scrape under melted cheese turns plain toast into something with real savoury depth, without the Marmite itself ever being the headline flavour. The trick is restraint: enough to see a faint brown sheen through the butter, no more. Buttered right to the edges before the Marmite goes on, the toast stays soft under the crust rather than drying out under the grill, and the cheese needs no longer than it takes to blister at the edges.
Ingredients
Contains: Gluten, Milk
- 2 slicewhite bread
- 15 gunsalted butter
- ½ tspMarmite, for a thin scrape over both slices
- 50 gCheddar, grated
Method
Heat the grill to high, and toast the bread on both sides until golden.
Butter the toast while it is still hot, right to the edges.
Spread a thin scrape of Marmite over the butter on each slice, thin enough that you can still see the butter through it.
Scatter the cheese evenly over both slices, right to the edges.
Grill for 2 to 3 minutes, until the cheese has melted and is bubbling and turning golden at the edges.
Cut each slice into three or four fingers and eat them straight away, while the cheese is still soft.
Watch-points
- White bread only, not a granary, wholemeal or seeded loaf.
- Keep the Marmite to a thin scrape. A heavy layer is a question of taste rather than of the diet, but it makes the toast very salty.
Stoma note: White bread thickens loose stoma output, which makes this a useful pick on a day when things are moving quickly.
Make it more nourishing
- Use 75 g of cheese instead of 50 for a thicker melt.
- Spread a thin layer of cream cheese under the Marmite before the cheese goes on.
- Serve 200 ml of warm whole milk alongside for extra calories without extra chewing.
Swaps
- Instead of Cheddar, use a mix of Cheddar and mozzarella
- melts softer and browns more gently, which suits a sore mouth better than a firm cheese crust
