Tuna mayonnaise is one of the few things on this list that asks almost nothing of the hob, only tinned tuna beaten with mayonnaise and a little lemon juice into something soft enough to spread rather than a dish of separate flakes. Rolled inside a tortilla that has been warmed only long enough to turn pliable, it holds together properly instead of splitting the moment you pick it up. A few ribbons of peeled, deseeded cucumber are worth adding if you fancy something to bite through, though the wrap is complete without them. No sweetcorn, no spring onion, nothing that could catch on the way through. Ten minutes, cold ingredients, and lunch that travels well if you need it to.

Ingredients

  • 100 gtinned tuna, drained
  • 2 tbspmayonnaise
  • 1 tsplemon juice, juice only, no zest or pith
  • 1white flour tortilla, warmed until soft and pliable
  • 40 gcucumber, peeled, deseeded and cut into thin ribbons — optional

Method

  1. Drain the tuna well and tip it into a bowl. Break it up with a fork.

  2. Add the mayonnaise and lemon juice and beat together until it forms a soft, spreadable paste with no large flakes left.

  3. Warm the tortilla for 20 to 30 seconds in a dry frying pan or the microwave, until soft and pliable.

  4. Spread the tuna mixture down the centre of the tortilla. Lay the cucumber ribbons alongside it if you are using them.

  5. Fold in the two short ends, then roll the tortilla up tightly from one long side. Cut in half to serve.

Watch-points

  • Use a plain white flour tortilla, not a wholemeal or seeded one.
  • If you add the cucumber, peel it fully and scrape out every seed before cutting it into ribbons. The wrap is complete without it.
  • Leave out sweetcorn and spring onion, whatever the filling you remember calls for. Neither is part of this version.

Some hospitals allow peeled, deseeded cucumber in small amounts; the leaflet this book follows does not. Leave it out if you have been told to.

Make it more nourishing

  • Add a hard-boiled egg, mashed in with the tuna. About 6 g more protein and it stretches the filling.
  • Use 3 tablespoons of mayonnaise instead of 2 for a softer, richer paste.
  • Stir a tablespoon of cream cheese through the tuna mixture for extra calories without extra volume.
