Buttered brioche with warm tinned peaches

Fries in batches easily. Do not crowd the pan or the brioche will steam rather than crisp.

Brioche fries in butter the way nothing else quite does, because the dough already has butter folded through it, and the result is a crust that turns properly golden while the inside stays soft as cake. Tinned peaches, warmed through in their own juice with a spoon of golden syrup, are the part that makes this feel like pudding for breakfast rather than an apology for one. Spoon them over the fried brioche with a little of the warm syrupy juice, and eat it while the plate is still steaming slightly. The one thing worth waiting for is the butter foaming before the brioche goes in. Into cool butter the slices soak it up rather than frying in it, and what you get is greasy instead of golden.

Ingredients

  • 2 slicebrioche, plain, no fruit or seeds
  • 20 gunsalted butter
  • 200 gtinned peach slices, in juice
  • 1 tbspgolden syrup

Method

  1. Fry the brioche slices in the butter in a frying pan over a medium heat for about a minute a side, until golden and slightly crisp at the edges. Let the butter foam before the bread goes in.

  2. While the brioche fries, warm the tinned peaches gently in a small pan with a few tablespoons of their juice and the golden syrup, until the syrup has melted through and the peaches are hot.

  3. Put the brioche on a warm plate and spoon the peaches and a little of the warm juice over the top.

Watch-points

  • Buy a plain brioche loaf or rolls with nothing baked in. Fruit brioche and seeded tops are off the list.
  • Use tinned peaches in juice rather than fresh ones, so there is no skin to catch.

Stoma note: A soft, gentle breakfast that adds calories without adding bulk, useful on a day when appetite is thin.

Make it more nourishing

  • Fry the brioche in a little more butter, nearer 30 g than 20.
  • Add an extra spoon of golden syrup, or stir a tablespoon of double cream into the warm peach juice.
  • Serve with a scoop of vanilla ice cream alongside if appetite allows for it.

Swaps

Instead of brioche, use thick white bread or a plain white roll
any soft plain white bread fries the same way if brioche is not to hand
