Fruit
Dried fruit
Avoid — On the avoid list of the leaflet this book follows, or restricted almost everywhere.
Swaps
- Instead of Dried fruit in baking, such as raisins, apricots or dates, use Extra golden syrup or sugar and vanilla, or a small amount of well-drained, finely diced tinned peach
- Dried fruit concentrates its skin and fibre as it dries, so the same sweetness comes from syrup or a little well-drained tinned fruit instead. Some hospitals allow a small amount of dried fruit cooked soft into a sauce, though this is uncommon, so treat it as an exception rather than the rule.
