Courgette

With care — Allowed by some hospitals and not others, or allowed only prepared a particular way.

How to prepare it

Peel it and scoop out the seeds. Cook it until soft.

Swaps

Instead of Coleslaw made with raw cabbage and carrot, use Finely diced, peeled, well-cooked courgette and carrot bound in mayonnaise
Raw cabbage keeps its tough ribs and skin, so the same creamy, mayonnaise-bound side comes from courgette and carrot cooked soft instead. Some hospitals allow very well-cooked cabbage in small amounts, so it is worth checking whether your team allows it before you leave it out entirely.
Instead of Guacamole or avocado, use A green dip made from peeled courgette blended with cream cheese, or leave out
Avocado looks smooth but is surprisingly dense in fibre, so this diet swaps it for a green dip built from courgette and cream cheese instead.
